Pepper is indispensable in any kitchen. Black pepper is probably one of the hottest varieties and has a slightly burning taste. It is particularly aromatic when it comes freshly ground from the mill. 

Pepper should always be used sparingly – you can always add more seasoning. The intense taste of this spice goes well with almost all dishes . Because black pepper is sensitive to heat, it should only be added just before consumption.

Pepper grows in the form of berries as panicles of the pepper bush. This is an evergreen plant and is native to the humid monsoon forests of India. Depending on the degree of ripeness, the pepper berries turn green, red or yellow. Black pepper comes from originally unripe, green berries, which are picked and then dried in the sun until they are black and slightly wrinkled.


Good to know:

Black pepper gets its heat from the piperine it contains. It stimulates the release of saliva and gastric juices and thus supports digestion. Essential oils, tannins and other secondary plant substances in black pepper also ensure that food becomes more digestible.

Pepper has an anti-inflammatory effect. It allows the mucous membranes to be better supplied with blood. It is therefore also ideal for sore throats and colds. 

Pepper is also very important in Ayurveda. It stimulates the digestive fire (Agni) and thus the metabolism, which in turn helps to reduce waste products in the body. It even has an antioxidant effect. 

The piperine in black pepper also acts as a bioenhancer, a so-called natural enhancer for other active ingredients. For example, according to studies, black pepper can increase the absorption of turmeric. Therefore, piperine is commonly used as an ingredient in many dietary supplements.

As an accompaniment to spicy dishes, you can add freshly ground pepper and a pinch of salt to natural yoghurt. 

This is how rice becomes particularly tasty: Briefly fry some peppercorns together with cumin in some ghee and add to the rice. This gives the rice a very special aroma.
